Meals of late
Lately I've been following the KISS method and it has been working. Somewhat. A few nights ago I made a very simple meat loaf which consisted of throwing one chopped onion, one peeled potato, one peeled carrot and a package of ground beef, along with an egg and some bread crumbs, into the food processor, pulsating it all for about 3 minutes then dumping onto a foil lined, sprayed baking sheet, forming into a loaf and putting it in the oven for 45 minutes at 400. I also made roast potatoes to accompany the meat loaf along with a spinach salad. Everything turned out really well but dear son decided that a peanut butter sandwich was way more appealing then this meal. Even the lure of ketchup couldn't get him to eat try this. Oh well! Everyone else really enjoyed it.
