Looks great, I'll have to try adding sweet potato to my curries. I find potato (and sweet potato) difficult to stir fry...it always stays too firm, or gets too mushy. Is there are trick??

I always precook them a little in the microwave first. Or I boil them for a few minutes and add them in at the end, just to get them a little crunchy.
