We are a soup family. Everyone loves to eat almost all kinds of soup and I love to make it.
The other night I was rummaging through the fridge and noticed an over abundance of vegetables. I guess I had been grocery shopping a few times lately and hadn't been cooking as much as I thought I would. Anyway, I decided to make a huge (I mean HUGE) pot of soup (well actually slow cooker full)
I took one cauliflour, one acorn squash, 4 very large carrots, 2 onions, 2 stalks of celery, 1 potato and various spices along with a carton of chicken stock and 2 cups of water put it all in the slow cooker turn it on over night and viola...we awoke to the lovely aroma of delicous soup! I then pureed it with the hand blender right in the pot and it was ready to eat for dinner that night.
YUMMY!! My kids like it but they liked it even better after I let them dump some Goldfish into their soup bowls adding cheesy yumminess to it!

You've inspired me! I have some carrots, butternut squash, and potatoes that are getting a bit old. Not too old to be edible, but old enough that they are best off boiled and processed. They are simmering on the stove top right now, and I am hoping for a tasty soup myself tonight!
sounds good! The butternut squash would have been even tastier than acorn squash but that was all I had. it was even better on day 2! and now it's all gone!
Yup, it was great. I simmered the veggies in some veggie broth for an hour or so,added a few shakes of curry powder, then pureed with the wand. Perfect! Even Charlotte and Zoƫ liked it.
