Baked Tilapia

Growing up I never heard of tilapia. We actually never ate fish when i was a kid, unless it was a fish stick and came out of a box.
When I finally got married and had a kitchen of my own I started making fish. At first I made salmon. It was what I knew and it was easy. Later I discovered that salmon is quite fatty (even it is good fat) so I want to limit how much of it i eat (now maybe once a month or two)
I decided to make tilapia more often. Sometimes i just sprinkle is it with fish seasoning but more often than not, i use a mix of Parmesan cheese, breadcrumbs and garlic powder sprinkled on the fillets and baked at 400 degrees until baked through and top is golden brown.
Leftovers make a delicious accompaniment to my salad for lunch the next day!
