Last night

I made this . It was so Delicious but definitely not low fat! I will make it again but will try it in the slow cooker so I can cut out the oil used to saute the onions, I did use lower fat coconut milk but the peanut butter added a lot of extra fat, the taste a tad overwhelmingly of pb so I'm pretty sure I could have used 1/4 cup instead of 1/2 a cup. I will also add a few more vegetables next time too. I think cauliflower and celery would have gone quite nicely in this dish!!
