I made the most delicious meat loaf the other day. It's a recipe I have made in the past but this time I had to be innovative as I didn't have everything on hand and just wanted to try it free hand.
I used one package of ground chicken, 1 carrot, 1 zucchini, 1 onion, 2 eggs, homemade bread crumbs and ketchup. I put all the vegetables in the food processor with the metal blending blade, once the vegetables were all ground up I added the meat and processed that for a pulses, then I added 2 eggs (although one would have been enough!) and just enough breadcrumbs to bind the meatloaf together. Once everything was mixed well I dumped into onto a foiled lined baking sheet and formed into a loaf. I covered the top with ketchup and baked in the convection oven at 400 for about 30 minutes. If you are using a regular oven (not convection) increase cooking time to about 45-50 minutes.
I served this with rice and steamed asparagus. Even the kids ate it!
