Chili

My favourite winter food is chili. Something so comforting and soothing about a nice bowl of hot steamy chili to warm you up on a cold winters' day. There so so many different recipes and ways to make chili but I tend to stick to my tried and true recipe. The same one my dad makes and has made for as long as I can remember.
Here it is:

1 package of lean ground beef
2 onions diced
2 green peppers cut into chunks
2 stalks of celery
1 zucchini (if you don't have one, don't bother- i just add it to increase fibre and bulk up the chili a bit)
2 cans of diced tomatoes
1 can of tomato paste
2 cans of kidney beans ( I sometimes use one can red kidney, one can white kidney beans) drained and rinsed
2 tablespoons of chili powder
1 teaspoon crushed chili peppers
1 tablespoon garlic powder
teaspoon cinnamon

Brown meat in a large pot with a tiny bit of oil or spray with PAM on med-high heat. Add onions and cook until soft/brown.(make sure not to burn)  Add vegetables and cook for another 5-10 minutes. Add tomatoes, beans and paste. Cook for a few more minutes. Add spices and turn heat down to med-low, let simmer for about an hour or until liquid has evaperated. We like a thicker chili but if you like it a little more soupy don't cook it for as long.
I like my chili with a bit of sour cream but if you keep kosher you could just add a tiny bit parve magarine or eat it plain.
