Another favourite winter food is tried and true sheppard's pie. I make mine the traditional way with ground beef and mashed potatoes- I've tried it with ground chicken and cauliflower topping or sweet potato but it's not the same as "meat and potatoes"
Here's how it's done:
1 package lean ground beef
1 onion chopped
1 tablespoon oil
2 cups corn kernels (either frozen or canned)
ketchup or BBQ sauce (no measurement-just eyeballed)
4 cups mashed potatoes (or how ever much you need to cover the meat)
Brown onion and ground beef in oil. Add corn. Pour ketchup to cover meat- more or less depending on how "saucy" you like it.
Cover with mashed potatoes and bake in oven at 375 for 20-30 minutes. I sometimes broil it for a few minutes at the end so it gets browned and a little crispy. Serve with salad and you're set!
