As part of an annual cookie exchange I receive a 1/2 dozen white chocolate bailey's balls. I really (REALLY) enjoyed them and decided I NEEDED to make them ASAP. Since we aren't really a drinking kind of family and I didn't want to run out to buy Bailey's just for this I decided to substitute Kahlua for the Bailey's. The result was really really delish!
here is the recipe:
1cup icing sugar
1 cup ground almonds
3 ounces grated white chocolate
1/2 tsp vanilla
1/3 c Kahlua
1/2 c white sprinkles
In a large bowl mix icing sugar, ground almonds, chocolate. Add vanilla and Kahlua, stir till mixed. Press together and put in fridge for 20-30 minutes.
Once chilled, form balls with a melon baller or teaspoon. Roll in additional Kahlua and then roll in sprinkles. Place on wax paper lined baking sheet and let air dry for about an hour. Once hardened put in air tight container and keep in fridge.
