Tonight I made a family favourite. Turkey meatloaf. It is so yummy and left overs (if there are any!) make a great lunch the next day- i try to always make enough so we'll have left overs- need to save myself cooking at least one or two nights a week!
here is what you'll need,
1 can of jelly cranberry sauce
2 cups chunky salsa (I like med spice)
2 tablespoons brown sugar
1 package ground turkey
1/2 cup oatmeal (or breadcrumbs work too if you don't have oatmeal)
in a small saucepan melt cranberry sauce, add salsa and sugar mix well,
mix turkey, cereal, and 1/2 cup of salsa/cranberry mix together in a large bowl.
On a foil lined, sprayed cooking sheet form meatloaf. Pour 1 more cup of sauce over top of loaf, reserve rest of sauce in a freezer safe container-freeze for use another time. Put meat loaf in oven at 400 degrees for 45 minutes (if you have a convection oven-which i do- and love- put it in for only 30 minutes) once cooked take out and let stand a few minutes before slicing so it stays together
Serve with sweet potato fries, challa bread and vegetable soup!
