Chicken Curry

We often get a BBQ chicken from the grocery store for dinner. Since we all like the white meat I often end up tossing the legs in the garbage, which is a colossal waste of money- and of good food! This time I decided to use the cooked chicken up and not just throw it away.
I cut up 3-4 small potatoes, 2 large carrots, 1 large sweet potato, and put it all in the slow cooker along with the diced chicken (off the bone), about 1/2 cup of chicken stock, one can of 1/2 fat cream of celery soup and about 2 tablespoons of curry powder. I turned it on low for 8 hours and came home a delicious curry dinner last night! Served it with brown rice AND had enough left over for lunch today! Once again I'm lovin' my slow cooker!
