Cooking rice always looked so difficult. My mother could never get it right. The rice was usually undercooked or way too soggy. Any type she tried to make turned out inedible. I thought rice cooking needed a special talent! I was wrong
I now have a never fail method for cooking the perfect pot of rice-no matter what type you are making-white, brown, basmati, jasmin- they all use a very similar method.
No need for a rice cooker at all (although it is a nice to have appliance, when ours broke I didn't bother replacing it-I just use this method)
Here it is:
1 cup of rice
2 cups of water
Place rice in pot, cover with water. Place covered pot on stove at high heat, bring to a boil. Once it is boiling reduce heat to low and keep covered for about 20 minutes. After 20 minutes rice will be cooked perfectly, not sticking to bottom of pot and not a teeny bit hard! Perfect.
My favourite stir fry sauce
no measurements needed/used here.
We love stir fry in our house. I usually make tofu stir fry over rice once a week. My kids will actually eat it, it's quite healthy and full of protein (and getting them to eat anything with proteins seems like the hardest thing in the world right now-my son refuses all meat-except hot dogs-so tofu is my savour)
seasame oil (about 1/4 cup)
soy sauce (about 1/4 cup)
worcestershire sauce (dash)
peanut butter (about a tablespoon)
honey (to taste)
mix ingrediants in a bowl, add to stir fried vegetables and tofu, mix and simmer for 5 minutes.

Hi Dina! Good luck with your new cooking blog. I love short grain brown rice - my favourite. My tummy doesn't like tofu. Apparently a lot of people don't digest tofu well. However, My sensitive tummy can handle tempeh. Because tempeh is fermented it changes so I don't have a problem with it. I didn't much used to like tempeh but it's really growing on me. It has this nutty taste to it. Yum!

I have never tried tempeh and am not even sure where i'd find it. I'm willing to try anything though!!

Should be able to get it the same place you get your tofu. We usually get ours at the health food store.
